Description

A lighter, comforting take on classic stroganoff made with lean ground turkey, mushrooms, and a creamy paprika sauce. Perfect over noodles, rice, or pasta.


Ingredients

  • 1 lb lean ground turkey
  • 1 tbsp olive oil or butter
  • 1 small onion, finely chopped
  • 23 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 1 tbsp flour (or cornstarch for gluten-free)
  • 1 cup low-sodium chicken broth
  • 1 tsp Worcestershire sauce
  • 1 tsp paprika
  • 1/2 cup sour cream (or Greek yogurt)
  • Salt and pepper to taste
  • Fresh parsley for garnish
  • Cooked pasta, egg noodles, or rice
  • Optional Add-ins: spinach or kale, Dijon mustard, chili flakes

Instructions

  1. Heat oil or butter in a large skillet over medium heat.
  2. Sauté onions until translucent (2–3 minutes), then add garlic and mushrooms. Cook until mushrooms are browned.
  3. Push the veggies aside, add ground turkey, and cook until browned.
  4. Sprinkle flour over turkey and cook for 1–2 minutes.
  5. Slowly stir in chicken broth.
  6. Add Worcestershire sauce and paprika, then simmer for 5–7 minutes.
  7. Remove from heat and stir in sour cream.
  8. Season with salt and pepper to taste.
  9. Serve over cooked noodles or rice, garnish with fresh parsley.

Notes

For a richer sauce, add Dijon mustard and chili flakes. If using Greek yogurt instead of sour cream, stir it in off the heat to prevent curdling.
