Description
A lighter, comforting take on classic stroganoff made with lean ground turkey, mushrooms, and a creamy paprika sauce. Perfect over noodles, rice, or pasta.

- 1 lb lean ground turkey
- 1 tbsp olive oil or butter
- 1 small onion, finely chopped
- 2–3 cloves garlic, minced
- 8 oz mushrooms, sliced
- 1 tbsp flour (or cornstarch for gluten-free)
- 1 cup low-sodium chicken broth
- 1 tsp Worcestershire sauce
- 1 tsp paprika
- 1/2 cup sour cream (or Greek yogurt)
- Salt and pepper to taste
- Fresh parsley for garnish
- Cooked pasta, egg noodles, or rice
- Optional Add-ins: spinach or kale, Dijon mustard, chili flakes
Instructions
- Heat oil or butter in a large skillet over medium heat.
- Sauté onions until translucent (2–3 minutes), then add garlic and mushrooms. Cook until mushrooms are browned.
- Push the veggies aside, add ground turkey, and cook until browned.
- Sprinkle flour over turkey and cook for 1–2 minutes.
- Slowly stir in chicken broth.
- Add Worcestershire sauce and paprika, then simmer for 5–7 minutes.
- Remove from heat and stir in sour cream.
- Season with salt and pepper to taste.
- Serve over cooked noodles or rice, garnish with fresh parsley.
Notes
For a richer sauce, add Dijon mustard and chili flakes. If using Greek yogurt instead of sour cream, stir it in off the heat to prevent curdling.
