- 1 small onion, diced
- 4 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, chopped
- 2 teaspoons Italian seasoning

- 2 cans butter beans, drained and rinsed
- 1 1/2 cups vegetable or chicken broth
- 1 cup heavy cream or half and half
- 1/2 cup grated Parmesan cheese, plus more for topping
- 2 cups fresh spinach
- Salt and black pepper to taste
- Optional: crispy bacon or pancetta crumbles
- Fresh parsley or thyme for garnish
Instructions
- Prep your ingredients: Dice the onion, mince the garlic, chop the sun-dried tomatoes, drain and rinse the butter beans, and grate the Parmesan.
- Heat the fat: In a large skillet over medium heat, add olive oil or butter and let it warm until shimmering.
- Soften the onion: Add the diced onion and sauté for about 5 minutes until translucent and softened.
- Add the garlic: Stir in the minced garlic and cook for 1 minute until fragrant.
- Build the flavor: Add the sun-dried tomatoes, Italian seasoning, and red pepper flakes (if using). Stir and let the flavors bloom for a minute.
- Add beans and broth: Stir in the drained butter beans and pour in the broth. Simmer for about 5 minutes.
- Make it creamy: Reduce heat slightly, add the heavy cream and Parmesan. Simmer for 5–7 minutes until the sauce thickens.
- Add greens: Toss in the spinach and stir until just wilted. Season with salt and black pepper.
- Plate and garnish: Serve hot, garnished with extra Parmesan and parsley or thyme.
Notes
For best results, reheat gently and avoid boiling the cream mixture. Adjust thickness with broth or water if necessary.
