  • 2 cans butter beans, drained and rinsed
  • 1 1/2 cups vegetable or chicken broth
  • 1 cup heavy cream or half and half
  • 1/2 cup grated Parmesan cheese, plus more for topping
  • 2 cups fresh spinach
  • Salt and black pepper to taste
  • Optional: crispy bacon or pancetta crumbles
  • Fresh parsley or thyme for garnish

Instructions

  1. Prep your ingredients: Dice the onion, mince the garlic, chop the sun-dried tomatoes, drain and rinse the butter beans, and grate the Parmesan.
  2. Heat the fat: In a large skillet over medium heat, add olive oil or butter and let it warm until shimmering.
  3. Soften the onion: Add the diced onion and sauté for about 5 minutes until translucent and softened.
  4. Add the garlic: Stir in the minced garlic and cook for 1 minute until fragrant.
  5. Build the flavor: Add the sun-dried tomatoes, Italian seasoning, and red pepper flakes (if using). Stir and let the flavors bloom for a minute.
  6. Add beans and broth: Stir in the drained butter beans and pour in the broth. Simmer for about 5 minutes.
  7. Make it creamy: Reduce heat slightly, add the heavy cream and Parmesan. Simmer for 5–7 minutes until the sauce thickens.
  8. Add greens: Toss in the spinach and stir until just wilted. Season with salt and black pepper.
  9. Plate and garnish: Serve hot, garnished with extra Parmesan and parsley or thyme.
