Instructions
- Melt butter in a large pot over medium heat. Add onion and garlic, and sauté until translucent and fragrant, about 5 minutes.
- Stir in carrots and potatoes, cooking for an additional 5 minutes until starting to soften. Pour in vegetable broth, bring to a simmer, and cook for 15-20 minutes.
- Add broccoli florets once vegetables are tender. Cook for another 5 minutes before removing from heat.
- Blend the soup using an immersion blender or transfer to a standard blender until smooth. Return to the stove over low heat.
- In a separate bowl, whisk together milk and flour until smooth, then gradually add to soup, stirring constantly.
- Add grated cheddar cheese, stirring until melted and well incorporated. Season with salt to taste, and cook over low heat for an additional 5-10 minutes until thickened.
- Ladle into bowls, garnish with extra cheese if desired, and serve hot with crusty bread or a side salad.
