  • 2 cups milk
  • 2 tablespoons all-purpose flour

Instructions

  1. Melt butter in a large pot over medium heat. Add onion and garlic, and sauté until translucent and fragrant, about 5 minutes.
  2. Stir in carrots and potatoes, cooking for an additional 5 minutes until starting to soften. Pour in vegetable broth, bring to a simmer, and cook for 15-20 minutes.
  3. Add broccoli florets once vegetables are tender. Cook for another 5 minutes before removing from heat.
  4. Blend the soup using an immersion blender or transfer to a standard blender until smooth. Return to the stove over low heat.
  5. In a separate bowl, whisk together milk and flour until smooth, then gradually add to soup, stirring constantly.
  6. Add grated cheddar cheese, stirring until melted and well incorporated. Season with salt to taste, and cook over low heat for an additional 5-10 minutes until thickened.
