  • 1 head of broccoli
  • 1 leek
  • 2 tablespoons unsalted butter
  • 1 yellow onion
  • 2 cloves garlic
  • 2 tablespoons all-purpose flour
  • 2 cups whole milk
  • 1 cup heavy cream
  • 1 cup shredded sharp cheddar cheese
  • 1 cup Gruyère cheese
  • 1/2 cup grated Parmesan cheese
  • Salt, to taste
  • Black pepper, to taste
  • Freshly grated nutmeg, to taste
  • 1 tablespoon fresh thyme
  • 1 tablespoon fresh rosemary
  • Panko breadcrumbs (optional)
  • Fresh parsley, for garnish

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a large baking dish.
  2. Peel and thinly slice the Russet and sweet potatoes; soak them in cold water with a tablespoon of vinegar.
  3. Peel and slice the carrots and parsnips into thin rounds.
  4. Prepare the broccoli by cutting florets into bite-sized pieces.
  5. Trim the leek, slice thinly, and rinse thoroughly.
  6. In a pot, melt butter and sauté diced onion until translucent. Add garlic and cook for another minute.
  7. Sprinkle flour over the mixture, stirring for 1-2 minutes, then whisk in warmed milk gradually.
  8. Add cream and cheeses, stirring until melted and smooth; season with salt, pepper, and nutmeg.
  9. In a baking dish, start with a layer of cheese sauce, followed by a layer of thinly sliced Russet potatoes.
  10. Add layers of sweet potatoes, then a mix of carrots, parsnips, broccoli, and leeks with more sauce.
  11. Repeat layering potatoes, vegetables, and sauce until all are used, ending with sauce and cheese on top.
  12. Cover with aluminum foil and bake for 45-60 minutes. Remove foil and continue baking until golden brown, another 20-30 minutes.
  13. Let rest for 15-20 minutes before serving; garnish with parsley.
