- 2 Russet potatoes
- 2 sweet potatoes
- 2 carrots
- 2 parsnips
- 1 head of broccoli
- 1 leek
- 2 tablespoons unsalted butter
- 1 yellow onion
- 2 cloves garlic
- 2 tablespoons all-purpose flour
- 2 cups whole milk
- 1 cup heavy cream
- 1 cup shredded sharp cheddar cheese
- 1 cup Gruyère cheese
- 1/2 cup grated Parmesan cheese
- Salt, to taste
- Black pepper, to taste
- Freshly grated nutmeg, to taste
- 1 tablespoon fresh thyme
- 1 tablespoon fresh rosemary
- Panko breadcrumbs (optional)
- Fresh parsley, for garnish
Instructions
- Preheat your oven to 375°F (190°C) and grease a large baking dish.
- Peel and thinly slice the Russet and sweet potatoes; soak them in cold water with a tablespoon of vinegar.
- Peel and slice the carrots and parsnips into thin rounds.
- Prepare the broccoli by cutting florets into bite-sized pieces.
- Trim the leek, slice thinly, and rinse thoroughly.
- In a pot, melt butter and sauté diced onion until translucent. Add garlic and cook for another minute.
- Sprinkle flour over the mixture, stirring for 1-2 minutes, then whisk in warmed milk gradually.
- Add cream and cheeses, stirring until melted and smooth; season with salt, pepper, and nutmeg.
- In a baking dish, start with a layer of cheese sauce, followed by a layer of thinly sliced Russet potatoes.
- Add layers of sweet potatoes, then a mix of carrots, parsnips, broccoli, and leeks with more sauce.
- Repeat layering potatoes, vegetables, and sauce until all are used, ending with sauce and cheese on top.
- Cover with aluminum foil and bake for 45-60 minutes. Remove foil and continue baking until golden brown, another 20-30 minutes.
- Let rest for 15-20 minutes before serving; garnish with parsley.
Notes
Great to prepare a day ahead; just bake directly from the fridge. Can be frozen for up to 2 months.
