Description

A delicious twist on the classic Caesar salad, combining crispy chicken with rich Caesar dressing in a fresh baguette.


Ingredients

  • ½ cup full-fat mayonnaise
  • 3 tbsp Greek yogurt
  • 1 tsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 2 tbsp lemon juice
  • ¼ cup Parmesan cheese (freshly grated)
  • 12 garlic cloves (minced)
  • ¼ tsp black pepper
  • Pinch sea salt
  • 5 chicken cutlets
  • Sea salt (to taste)
  • Ground black pepper (to taste)
  • Oil (for frying)
  • ⅓ cup all-purpose flour
  • ½ tsp salt
  • ¾ tsp smoked paprika
  • 2 eggs
  • ¼ tsp salt
  • ¾ cup panko crumbs
  • ¼ cup breadcrumbs
  • 1 tsp dried parsley
  • ½ tsp ground black pepper
  • ½ tsp sea salt
  • ½ tsp dried oregano
  • 1 tsp garlic powder
  • ¼ cup Parmesan cheese (freshly grated)
  • 2 romaine hearts (chopped)
  • 12 French baguettes
  • Parmesan cheese (freshly grated)

Instructions

  1. Prepare the Caesar dressing in a bowl by mixing all dressing ingredients until smooth and creamy. Set aside some dressing for the salad.
  2. Combine chopped romaine lettuce with 4–5 tablespoons of the dressing in a medium bowl; cover and refrigerate both.
  3. Flatten chicken cutlets if uneven, then season with salt and black pepper.
  4. Set up a breading station: mix flour, salt, and smoked paprika in one plate, whisk eggs with salt in the second, and mix panko, breadcrumbs, parsley, black pepper, salt, oregano, garlic powder, and Parmesan in the third.
  5. Heat oil in a frying pan over medium heat. Dredge each cutlet in flour, dip in egg, and press into breadcrumb mixture.
  6. Once oil is hot, fry cutlets until golden, about 4-5 minutes per side. Drain on a wire rack.
  7. Slice baguettes into 12 cm (5″) portions and cut open lengthwise. Spread reserved dressing, add crispy chicken cutlet, top with Caesar salad, and sprinkle with Parmesan.
  8. Close the sandwiches and serve immediately with fries.

Notes

Use fresh ingredients for the best flavor. Make sure oil is hot enough for frying.
