Description

An exciting twist on chicken that combines the tanginess of dill pickles with crunchy parmesan for a delicious meal.


Ingredients

  • 4 chicken breasts, boneless and skinless
  • 1 cup dill pickle juice
  • 1 cup breadcrumbs (preferably seasoned)
  • ½ cup grated Parmesan cheese
  • 2 large eggs
  • ½ cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon paprika
  • Salt and pepper to taste
  • Cooking oil (for frying)

Instructions

  1. In a large bowl, combine the chicken breasts and dill pickle juice. Marinate in the refrigerator for at least 30 minutes.
  2. Set up a three-bowl breading station: flour with salt, pepper, and garlic powder in the first bowl; whisked eggs in the second; breadcrumbs and Parmesan in the third.
  3. Heat oil in a large skillet over medium heat until it sizzles when a breadcrumb is dropped in.
  4. Remove chicken from marinade, shake off excess juice, dredge in flour, dip in egg, and coat with breadcrumb-Parmesan mixture.
  5. Fry the breaded chicken in hot oil for about 5-7 minutes per side until golden brown and cooked through.
  6. Transfer to a plate lined with paper towels to absorb excess oil.
  7. Let rest for 5-10 minutes before serving.

Notes

Ensure evenly sized chicken breasts for even cooking. For baking, place breaded chicken on a baking sheet at 400°F (200°C) for 20-25 minutes, flipping halfway through.
