Description
An exciting twist on chicken that combines the tanginess of dill pickles with crunchy parmesan for a delicious meal.
Ingredients
Scale
- 4 chicken breasts, boneless and skinless
- 1 cup dill pickle juice
- 1 cup breadcrumbs (preferably seasoned)
- ½ cup grated Parmesan cheese
- 2 large eggs
- ½ cup all-purpose flour
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon paprika
- Salt and pepper to taste
- Cooking oil (for frying)
Instructions
- In a large bowl, combine the chicken breasts and dill pickle juice. Marinate in the refrigerator for at least 30 minutes.
- Set up a three-bowl breading station: flour with salt, pepper, and garlic powder in the first bowl; whisked eggs in the second; breadcrumbs and Parmesan in the third.
- Heat oil in a large skillet over medium heat until it sizzles when a breadcrumb is dropped in.
- Remove chicken from marinade, shake off excess juice, dredge in flour, dip in egg, and coat with breadcrumb-Parmesan mixture.
- Fry the breaded chicken in hot oil for about 5-7 minutes per side until golden brown and cooked through.
- Transfer to a plate lined with paper towels to absorb excess oil.
- Let rest for 5-10 minutes before serving.
Notes
Ensure evenly sized chicken breasts for even cooking. For baking, place breaded chicken on a baking sheet at 400°F (200°C) for 20-25 minutes, flipping halfway through.
