Instructions
- Crumble the feta cheese into bite-sized pieces.
- Heat olive oil in a non-stick skillet over medium-high heat until shimmering.
- Scatter the crumbled feta into the hot pan, sprinkle red pepper flakes, and cook undisturbed for 3 to 5 minutes until golden.
- Gently stir or flip the feta and continue cooking for another 2 to 3 minutes until crispy.
- Crack the eggs into small bowls and push some feta towards the edges of the pan to create spaces in the center.
- Slide each egg carefully into the clear spaces in the skillet.
- Cook the eggs over medium-high heat for 2 to 4 minutes, until the whites are set and yolks remain runny.
- Season with salt and pepper, and serve immediately with optional garnish of parsley.
