  • 1/2 teaspoon red pepper flakes (optional)

Instructions

  1. Crumble the feta cheese into bite-sized pieces.
  2. Heat olive oil in a non-stick skillet over medium-high heat until shimmering.
  3. Scatter the crumbled feta into the hot pan, sprinkle red pepper flakes, and cook undisturbed for 3 to 5 minutes until golden.
  4. Gently stir or flip the feta and continue cooking for another 2 to 3 minutes until crispy.
  5. Crack the eggs into small bowls and push some feta towards the edges of the pan to create spaces in the center.
  6. Slide each egg carefully into the clear spaces in the skillet.
  7. Cook the eggs over medium-high heat for 2 to 4 minutes, until the whites are set and yolks remain runny.
