Ingredients

  • 2 large sweet onions
  • 1 cup gluten-free all-purpose flour blend
  • 1 tsp baking powder
  • 1 tsp salt
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 2 large eggs
  • 1 cup buttermilk (or milk + 1 tbsp lemon juice)
  • 2 cups gluten-free panko-style breadcrumbs
  • Oil for frying (neutral oil with high smoke point such as vegetable, canola, or sunflower)

Instructions

  1. Peel onions and cut into 1/2-inch slices. Separate into rings.
  2. In the first bowl, mix flour, baking powder, salt, paprika, and garlic powder.
  3. In the second bowl, whisk eggs and buttermilk.
  4. In the third bowl, place breadcrumbs.
  5. Dredge onion rings in flour, dip in egg mixture, then coat in breadcrumbs. Press gently to adhere.
  6. Heat oil in a deep fryer or heavy pot to 350°F (175°C).
  7. Fry onion rings in batches for 2–3 minutes until golden brown.
  8. Drain on paper towels and serve hot with your favorite dipping sauce.
