Ingredients

  • 2 medium zucchini, grated
  • 1/4 cup finely chopped onion
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup all-purpose flour
  • 2 large eggs
  • 2 tablespoons chopped fresh parsley (optional)
  • 2 – 3 tablespoons oil for frying

Instructions

  1. Prepare the zucchini by washing, trimming, and grating them.
  2. Remove the excess liquid by squeezing the grated zucchini in a towel.
  3. Mix the batter by combining the zucchini, onion, Parmesan, garlic, salt, pepper, flour, and eggs in a bowl.
  4. Heat the skillet over medium heat and add oil until shimmering.
  5. Scoop 2–3 tablespoons of batter per fritter into the pan and flatten them slightly.
  6. Cook for 3–4 minutes until golden, then flip and cook for another 3–4 minutes.
  7. Drain cooked fritters on paper towels and serve warm.
