Description

Tender shredded teriyaki chicken slow cooked in a sweet and savory sauce with soy, garlic, ginger, and a touch of heat. Perfect served over rice with sesame seeds and green onions.


Ingredients

  • 2 lbs boneless, skinless chicken breasts or thighs
  • ⅓ cup soy sauce (or tamari for gluten-free)
  • ⅓ cup brown sugar
  • 2 tbsp ketchup
  • 1 tbsp apple cider vinegar
  • 3 garlic cloves, minced
  • ½ tsp minced ginger
  • ¼ tsp red pepper flakes
  • 2 tbsp cornstarch + 2 tbsp water (slurry)
  • Optional Garnishes: green onions (sliced), sesame seeds

Instructions

  1. Make the Sauce: In a bowl, whisk together soy sauce, brown sugar, ketchup, apple cider vinegar, garlic, ginger, red pepper flakes, and cornstarch slurry.
  2. Add to Crock Pot: Place chicken in the slow cooker and pour the sauce over the chicken.
  3. Cook: On LOW for 4 hours or HIGH for 2.5–3 hours.
  4. Shred and Return: Remove chicken, shred with forks, and return to the crock pot. Let simmer uncovered for 15–20 minutes to thicken sauce.
  5. Serve: Spoon over rice or desired base. Garnish with sesame seeds and sliced green onions.

Notes

For extra sweetness, add a tablespoon of honey. If you prefer spicier teriyaki, increase the red pepper flakes.
