Description
Tender shredded teriyaki chicken slow cooked in a sweet and savory sauce with soy, garlic, ginger, and a touch of heat. Perfect served over rice with sesame seeds and green onions.

- 2 lbs boneless, skinless chicken breasts or thighs
- ⅓ cup soy sauce (or tamari for gluten-free)
- ⅓ cup brown sugar
- 2 tbsp ketchup
- 1 tbsp apple cider vinegar
- 3 garlic cloves, minced
- ½ tsp minced ginger
- ¼ tsp red pepper flakes
- 2 tbsp cornstarch + 2 tbsp water (slurry)
- Optional Garnishes: green onions (sliced), sesame seeds
Instructions
- Make the Sauce: In a bowl, whisk together soy sauce, brown sugar, ketchup, apple cider vinegar, garlic, ginger, red pepper flakes, and cornstarch slurry.
- Add to Crock Pot: Place chicken in the slow cooker and pour the sauce over the chicken.
- Cook: On LOW for 4 hours or HIGH for 2.5–3 hours.
- Shred and Return: Remove chicken, shred with forks, and return to the crock pot. Let simmer uncovered for 15–20 minutes to thicken sauce.
- Serve: Spoon over rice or desired base. Garnish with sesame seeds and sliced green onions.
Notes
For extra sweetness, add a tablespoon of honey. If you prefer spicier teriyaki, increase the red pepper flakes.
