Ingredients

  • 3 boneless, skinless chicken breasts
  • 1 (10 oz) can diced tomatoes with green chiles, undrained
  • 1 (10.5 oz) can condensed cream of chicken soup
  • 1 (10.5 oz) can condensed cream of mushroom soup
  • ½ yellow onion, diced
  • 2 tsp minced garlic
  • 2 tsp dried Italian seasoning
  • 4 oz cream cheese, diced
  • 2 cups shredded sharp cheddar cheese, divided
  • 1 (16 oz) package spaghetti, broken into 23 inch pieces

Instructions

  1. Pat chicken breasts dry and season both sides with salt, pepper, and optional spices.
  2. Optional: Sear chicken in a skillet over medium-high heat for 2–3 minutes per side.
  3. Sauté diced onion in the same skillet until translucent, then add minced garlic for an additional minute.
  4. Whisk together the cream of chicken soup, cream of mushroom soup, and diced tomatoes in a bowl.
  5. Pour sauce mixture over chicken and onions in the slow cooker, ensuring chicken is mostly submerged.
  6. Cover and slow cook on LOW for 4–5 hours or HIGH for 2–3 hours until chicken is tender.
  7. Shred the cooked chicken and return it to the slow cooker.
  8. Cook spaghetti according to package directions, stopping 1–2 minutes before al dente, then drain.
  9. Fold spaghetti and cream cheese into the slow cooker with the chicken and sauce.
  10. Sprinkle remaining cheddar cheese on top and cover; cook on LOW for another 30-60 minutes.
  11. Let rest for 10–15 minutes before serving.

Notes

To avoid mushy spaghetti, undercook by 1-2 minutes and stir gently when combining.
