A delightful and comforting dish that combines creamy, cheesy goodness with juicy chicken and tender spaghetti, perfect for family dinners or gatherings.


Ingredients

  • 3 boneless, skinless chicken breasts
  • 1 (10 oz) can diced tomatoes with green chiles, undrained
  • 1 (10.5 oz) can condensed cream of chicken soup
  • 1 (10.5 oz) can condensed cream of mushroom soup
  • ½ yellow onion, diced
  • 2 tsp minced garlic
  • 2 tsp dried Italian seasoning
  • 4 oz cream cheese, diced
  • 2 cups shredded sharp cheddar cheese, divided
  • 1 (16 oz) package spaghetti, broken into 23 inch pieces

Instructions

  1. Pat the chicken breasts thoroughly dry and season generously.
  2. Heat a skillet over medium-high heat and sear the chicken for 2-3 minutes per side until golden brown. Transfer to the slow cooker.
  3. Sauté the diced onion in the same skillet over medium heat for 5-7 minutes until softened. Add the minced garlic and stir for 1 minute until fragrant. Transfer this mixture to the slow cooker.
  4. In a medium bowl, whisk together the condensed soups and the undrained can of diced tomatoes. Stir in the Italian seasoning.
  5. Pour the sauce mixture over the chicken in the slow cooker. Cover and cook on LOW for 4-5 hours or on HIGH for 2-3 hours.
  6. Remove the chicken and shred it with two forks. Return shredded chicken to the slow cooker and stir to combine.
  7. In a pot, bring salted water to a boil and add spaghetti. Cook according to package directions until al dente. Drain and set aside.
  8. Add the drained spaghetti to the slow cooker with 1.5 cups of shredded cheddar and diced cream cheese. Stir until mostly melted.
  9. Sprinkle the remaining cheddar over the top. Cover and cook on LOW for another 30-60 minutes.
  10. Let the spaghetti rest for 10-15 minutes before serving.

Notes

Store leftovers in an airtight container for 3-4 days in the fridge or freeze for up to 2 months. Reheat in the microwave or stovetop.
