- 3 boneless, skinless chicken breasts
- 1 (10 oz) can diced tomatoes with green chiles, undrained
- 1 (10.5 oz) can condensed cream of chicken soup
- 1 (10.5 oz) can condensed cream of mushroom soup
- ½ yellow onion, diced
- 2 tsp minced garlic
- 2 tsp dried Italian seasoning
- 4 oz cream cheese, diced
- 2 cups shredded sharp cheddar cheese, divided
- 1 (16 oz) package spaghetti, broken into 2–3 inch pieces
Instructions
- Pat the chicken breasts thoroughly dry and season generously.
- Heat a skillet over medium-high heat and sear the chicken for 2-3 minutes per side until golden brown. Transfer to the slow cooker.
- Sauté the diced onion in the same skillet over medium heat for 5-7 minutes until softened. Add the minced garlic and stir for 1 minute until fragrant. Transfer this mixture to the slow cooker.
- In a medium bowl, whisk together the condensed soups and the undrained can of diced tomatoes. Stir in the Italian seasoning.
- Pour the sauce mixture over the chicken in the slow cooker. Cover and cook on LOW for 4-5 hours or on HIGH for 2-3 hours.
- Remove the chicken and shred it with two forks. Return shredded chicken to the slow cooker and stir to combine.
- In a pot, bring salted water to a boil and add spaghetti. Cook according to package directions until al dente. Drain and set aside.
- Add the drained spaghetti to the slow cooker with 1.5 cups of shredded cheddar and diced cream cheese. Stir until mostly melted.
- Sprinkle the remaining cheddar over the top. Cover and cook on LOW for another 30-60 minutes.
- Let the spaghetti rest for 10-15 minutes before serving.
Notes
Store leftovers in an airtight container for 3-4 days in the fridge or freeze for up to 2 months. Reheat in the microwave or stovetop.
