Crock Pot Cheesy Chicken Spaghetti

Description

A cozy and cheesy meal that cooks itself in the slow cooker, perfect for busy weeknights.


Ingredients

  • 3 boneless, skinless chicken breasts
  • 1 (10 oz) can diced tomatoes with green chiles, undrained
  • 1 (10.5 oz) can condensed cream of chicken soup
  • 1 (10.5 oz) can condensed cream of mushroom soup
  • 1/2 yellow onion, diced
  • 2 tsp minced garlic
  • 2 tsp dried Italian seasoning
  • 4 oz cream cheese, diced
  • 2 cups shredded sharp cheddar cheese, divided
  • 1 (16 oz) package spaghetti, broken into 2 to 3 inch pieces

Instructions

  1. Pat the chicken breasts dry and season with your preferred seasonings.
  2. Heat a skillet over medium-high heat and sear the chicken for 2-3 minutes per side until golden brown.
  3. Transfer the chicken to the bottom of your slow cooker.
  4. Sauté the diced onion in the same skillet for 5-7 minutes, then add minced garlic for another minute and transfer to the slow cooker.
  5. In a bowl, whisk the cream of chicken and mushroom soups with the diced tomatoes and Italian seasoning.
  6. Pour the sauce mixture over the chicken in the slow cooker and cover. Cook on LOW for 4-5 hours or on HIGH for 2-3 hours.
  7. Remove the chicken, shred it, and return it to the slow cooker.
  8. Cook spaghetti according to package directions until al dente, drain and add to the slow cooker.
  9. Add 1.5 cups of cheddar cheese and cream cheese, stir gently.
  10. Sprinkle remaining cheddar on top, cover, and cook on LOW for another 30-60 minutes until the cheese is melted and bubbly.
  11. Let it rest for 10-15 minutes before serving.

Notes

Ensure to not overcook the spaghetti and allow the dish to rest for desired thickness.
