- 1.5 to 2 pounds boneless, skinless chicken breasts
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon dried Italian seasoning
- 1 tablespoon olive oil (for searing)
- 1 jar sun-dried tomatoes (drained and sliced)
- 1 cup low-sodium chicken broth
- 1 cup heavy cream
- 2 tablespoons reserved sun-dried tomato oil
- 1 tablespoon dried Italian seasoning
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
- ¼ teaspoon red pepper flakes (optional)
- 4 ounces cream cheese (cubed and softened)
- ½ cup grated Parmesan cheese
- 2 to 3 cups fresh baby spinach
- Fresh parsley (for garnish)
Instructions
- Pat dry and season chicken breasts with salt, pepper, garlic powder, onion powder, and Italian seasoning.
- Optionally, sear chicken in olive oil for 2-3 minutes per side until golden brown.
- Place sun-dried tomatoes over the chicken in the slow cooker.
- Whisk together chicken broth, heavy cream, reserved sun-dried tomato oil, Italian seasoning, garlic powder, onion powder, and red pepper flakes in a bowl.
- Pour sauce over the chicken and tomatoes in the slow cooker.
- Cook on low for 3-4 hours or high for 2-3 hours until chicken is fork-tender.
- Add cream cheese and Parmesan to the slow cooker, stirring until melted and smooth.
- Introduce spinach into the mixture and stir until wilted.
- Shred chicken or serve whole according to preference.
- Garnish with parsley and serve over pasta, rice, or with bread.

Leftovers can be refrigerated for up to 3-4 days or frozen for up to 2 months.
