Ingredients

  • 1.5 to 2 pounds boneless, skinless chicken breasts
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried Italian seasoning
  • 1 tablespoon olive oil (for searing)
  • 1 jar sun-dried tomatoes (drained and sliced)
  • 1 cup low-sodium chicken broth
  • 1 cup heavy cream
  • 2 tablespoons reserved sun-dried tomato oil
  • 1 tablespoon dried Italian seasoning
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon red pepper flakes (optional)
  • 4 ounces cream cheese (cubed and softened)
  • ½ cup grated Parmesan cheese
  • 2 to 3 cups fresh baby spinach
  • Fresh parsley (for garnish)

Instructions

  1. Pat dry and season chicken breasts with salt, pepper, garlic powder, onion powder, and Italian seasoning.
  2. Optionally, sear chicken in olive oil for 2-3 minutes per side until golden brown.
  3. Place sun-dried tomatoes over the chicken in the slow cooker.
  4. Whisk together chicken broth, heavy cream, reserved sun-dried tomato oil, Italian seasoning, garlic powder, onion powder, and red pepper flakes in a bowl.
  5. Pour sauce over the chicken and tomatoes in the slow cooker.
  6. Cook on low for 3-4 hours or high for 2-3 hours until chicken is fork-tender.
  7. Add cream cheese and Parmesan to the slow cooker, stirring until melted and smooth.
  8. Introduce spinach into the mixture and stir until wilted.
  9. Shred chicken or serve whole according to preference.
  10. Garnish with parsley and serve over pasta, rice, or with bread.

Leftovers can be refrigerated for up to 3-4 days or frozen for up to 2 months.
