- 4 chicken breasts
- 1 cup balsamic vinegar
- 2 cups mixed vegetables (such as bell peppers, carrots, and broccoli)
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- Salt and pepper to taste
- Fresh basil for garnish (optional)
Instructions
- In a crockpot, add the chicken breasts and pour the balsamic vinegar and olive oil over them.
- Add the mixed vegetables and minced garlic.
- Season with salt and pepper.
- Cover and cook on low for 6–8 hours or high for 3–4 hours until the chicken is cooked through and tender.
- Shred the chicken with two forks and mix everything together in the crockpot.
- Serve hot, garnished with fresh basil if desired.
Notes
For a lighter option, serve over mixed greens. Use fresh garlic for the best flavor and don’t overcrowd the pot.
