Ingredients

  • 1 pound dried black beans
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 bell pepper, diced
  • 4 cups vegetable broth
  • 1 can diced tomatoes (14.5 ounces)
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Rinse and sort the black beans, removing any small stones or damaged beans. Soak them overnight in water.
  2. Drain and rinse the soaked beans and add them to the crockpot with the chopped onion, minced garlic, diced carrot, and diced bell pepper.
  3. Pour in the vegetable broth and diced tomatoes. Stir in the cumin, chili powder, salt, and pepper.
  4. Cover and cook on low for 8 hours or high for 4 hours. Check liquid levels mid-way and adjust if necessary.
  5. For a thicker soup, remove some mixture to blend smooth and stir back in.
  6. Taste and adjust seasoning. Serve hot, garnished with fresh cilantro.
