Ingredients

Scale
  • 12 eggs
  • 2 cups milk
  • 1 loaf of bread, cubed
  • 2 cups cooked sausage or bacon, crumbled
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 cup diced bell peppers
  • 1 cup diced onions
  • Salt and pepper to taste
  • Optional: herbs like parsley or chives for garnish

Instructions

  1. In a large bowl, whisk together the eggs, milk, salt, and pepper.
  2. Stir in the cubed bread, cooked sausage or bacon, bell peppers, onions, and half of the cheese.
  3. Pour the mixture into a greased crockpot.
  4. Cook on low for 6–8 hours or on high for 3–4 hours, until the eggs are set.
  5. Top with the remaining cheese in the last 30 minutes of cooking.

Notes

Use slightly stale bread for better absorption of the custard. Can be made ahead and stored in the refrigerator overnight.
