- 1 lb Italian sausage (mild or spicy)
- 1 (19 oz) package frozen cheese tortellini
- 4 cups fresh spinach, chopped
- 1 (28 oz) can diced tomatoes (undrained)
- 1 (8 oz) block cream cheese, cubed
- 4 cups chicken broth
- 1 teaspoon minced garlic
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- In a skillet over medium heat, cook the Italian sausage until browned and fully cooked. Drain excess fat and set aside.
- In the crockpot, combine the browned sausage, diced tomatoes (with juice), minced garlic, Italian seasoning, and chicken broth. Stir to mix.
- Scatter cubed cream cheese over the mixture, cover, and cook on low for 4-5 hours or high for 2-3 hours until melted.
- In the last 30 minutes of cooking, add frozen cheese tortellini and fresh spinach, stirring well to incorporate.
- Before serving, taste and adjust seasoning with salt and pepper.
- Ladle into bowls and serve warm, optionally topped with grated Parmesan cheese.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat with a bit of chicken broth if needed.
