Description

A delightful dish of Italian sausage, creamy cheese, and fresh spinach, perfect for busy days and serving a crowd.


Ingredients

  • 1 lb Italian sausage (mild or spicy)
  • 1 (19 oz) package frozen cheese tortellini
  • 4 cups fresh spinach, chopped
  • 1 (28 oz) can diced tomatoes (undrained)
  • 1 (8 oz) block cream cheese, cubed
  • 4 cups chicken broth
  • 1 teaspoon minced garlic
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a skillet over medium heat, cook the Italian sausage until browned and fully cooked. Drain excess fat and set aside.
  2. In the crockpot, combine the browned sausage, diced tomatoes (with juice), minced garlic, Italian seasoning, and chicken broth. Stir to mix.
  3. Scatter cubed cream cheese over the mixture, cover, and cook on low for 4-5 hours or high for 2-3 hours until melted.
  4. In the last 30 minutes of cooking, add frozen cheese tortellini and fresh spinach, stirring well to incorporate.
  5. Before serving, taste and adjust seasoning with salt and pepper.
  6. Ladle into bowls and serve warm, optionally topped with grated Parmesan cheese.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat with a bit of chicken broth if needed.
