Description

A comforting Italian stew made with chicken, vegetables, and rich tomatoes, all slow-cooked to perfection.


Ingredients

  • 2 pounds boneless, skinless chicken thighs or breasts
  • 1 tablespoon olive oil
  • 1 small yellow onion, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 8 ounces mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 (28-ounce) can crushed tomatoes
  • 1 (14.5-ounce) can diced tomatoes, drained
  • ½ cup chicken broth
  • 1 teaspoon Italian seasoning
  • ½ teaspoon dried basil
  • ½ teaspoon dried oregano
  • ¼ teaspoon red pepper flakes (optional)
  • Salt to taste
  • Pepper to taste

Instructions

  1. Pat the chicken dry and season with salt and pepper.
  2. Heat olive oil in a skillet and brown the chicken for 3–5 minutes per side, if desired. Transfer to slow cooker.
  3. Sauté onion and bell peppers in the skillet for 5–7 minutes until softened.
  4. Add mushrooms and garlic, sauté for another 3–5 minutes.
  5. Deglaze the skillet with chicken broth, scraping up browned bits for 1–2 minutes.
  6. Transfer sautéed vegetables and liquid to the slow cooker over the chicken.
  7. Add crushed and diced tomatoes, along with seasonings, mixing gently.
  8. Cover and slow cook on LOW for 6–8 hours or HIGH for 3–4 hours until chicken is tender.
  9. Shred chicken if desired, adjust seasoning, and serve over pasta, rice, or polenta.

Notes

For a vegetarian version, substitute chicken with firm tofu and vegetable broth.
