Description

Ingredients

  • 2 lbs chicken breasts
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 packet taco seasoning
  • 1 cup salsa
  • Salt and pepper to taste
  • Cooked rice or tortillas for serving
  • Toppings: avocado, cheese, sour cream, cilantro

Instructions

  1. Place the chicken breasts at the bottom of the crockpot.
  2. Add the sliced bell peppers, onion, black beans, corn, taco seasoning, salsa, salt, and pepper on top of the chicken.
  3. Stir to combine, ensuring the chicken is coated with the seasoning and salsa.
  4. Cover and cook on low for 6–8 hours or high for 3–4 hours.
  5. Shred the chicken directly in the crockpot with two forks and stir everything together.
  6. Serve over cooked rice or in tortillas with your favorite toppings.
