- 3–4 lbs beef roast
- 1 cup fresh or frozen cranberries
- 1/2 cup balsamic vinegar
- 1/2 cup beef broth
- 1 onion, sliced
- 2 cloves garlic, minced
- Salt and pepper to taste
- 1 tablespoon olive oil
- Fresh herbs (like rosemary or thyme) for garnish
Instructions
- Heat olive oil in a skillet over medium-high heat. Season the beef roast with salt and pepper, then sear on all sides until browned.
- Place sliced onion and minced garlic in the bottom of the crockpot.
- In a bowl, mix cranberries, balsamic vinegar, and beef broth. Pour this mixture over the beef in the crockpot.
- Cover and cook on low for 360–480 minutes or until the beef is tender.
- Remove the beef roast and let it rest for a few minutes before slicing.
- Serve with the sauce from the crockpot and garnish with fresh herbs.
Notes
For maximum flavor, sear the beef before slow cooking and consider reducing the sauce for thickness. Adjust sweetness or acidity to taste.
