- 1.5 to 2 lbs boneless, skinless chicken breasts or thighs
- 1 (8 oz) block cream cheese
- 1 cup salsa
- 1 packet taco seasoning
- 1 cup shredded cheddar cheese
- Tortilla chips, for serving
- Optional: diced tomatoes, cilantro, sour cream, jalapeños, green onions
Instructions
- Place the chicken breasts or thighs in the bottom of your crockpot in an even layer.
- Add the cream cheese, salsa, and taco seasoning on top of the chicken.
- Cover and cook on LOW for 4–6 hours or HIGH for 2–3 hours.
- Once the chicken is tender, shred it with forks and stir everything together until the cream cheese and salsa form a smooth, creamy sauce.
- Add the shredded cheddar cheese and mix until melted and creamy.
- Spoon the creamy chicken mixture over a bed of tortilla chips and top with optional toppings as desired. Serve hot!
