Ingredients

  • 2 pounds beef roast (chuck or round)
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 4 rolls (French or hoagie)
  • 8 slices provolone or Swiss cheese
  • Au jus for dipping

Instructions

  1. Place the beef roast in your crockpot and season with salt and pepper.
  2. Top with sliced onion and minced garlic, then pour in the beef broth, Worcestershire sauce, thyme, and rosemary.
  3. Cover and cook on low for 8 hours.
  4. Remove the roast from the crockpot and shred it with two forks.
  5. Return shredded beef to the crockpot to absorb the juices for a few more minutes.
  6. Preheat the oven to broil.
  7. Slice the rolls in half and arrange them on a baking sheet.
  8. Pile the shredded beef onto each roll and top with cheese.
  9. Broil in the oven until the cheese is melted and bubbly.
  10. Serve warm with au jus for dipping.
