Ingredients

- 2 pounds beef roast (chuck or round)
- 1 onion, sliced
- 3 cloves garlic, minced
- 1 cup beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 4 rolls (French or hoagie)
- 8 slices provolone or Swiss cheese
- Au jus for dipping
Instructions
- Place the beef roast in your crockpot and season with salt and pepper.
- Top with sliced onion and minced garlic, then pour in the beef broth, Worcestershire sauce, thyme, and rosemary.
- Cover and cook on low for 8 hours.
- Remove the roast from the crockpot and shred it with two forks.
- Return shredded beef to the crockpot to absorb the juices for a few more minutes.
- Preheat the oven to broil.
- Slice the rolls in half and arrange them on a baking sheet.
- Pile the shredded beef onto each roll and top with cheese.
- Broil in the oven until the cheese is melted and bubbly.
- Serve warm with au jus for dipping.
Notes
For a spicy version, add jalapeños. For a vegetarian option, use portobello mushrooms and vegetable broth.
