Ingredients

- 2 pounds beef chuck, cut into bite-sized pieces
- 4 tablespoons garlic butter
- 1 pound baby potatoes, halved
- 1 onion, chopped
- Salt and pepper to taste
- Fresh parsley, for garnish
Instructions
- In a crockpot, place the chopped onion and halved baby potatoes.
- Add the beef chunks on top of the vegetables.
- Melt the garlic butter and pour it over the beef and potatoes.
- Season with salt and pepper.
- Cover the crockpot and cook on low for 360–480 minutes (6–8 hours) or on high for 180–240 minutes (3–4 hours) until the beef is tender.
- Garnish with fresh parsley before serving.
Notes
For richer flavor, brown the beef before adding to the crockpot. Adjust seasonings according to taste.
