- 4 boneless, skinless chicken breasts
- 1 cup feta cheese, crumbled
- 1 cup Kalamata olives, pitted
- 1 can diced tomatoes (14 oz)
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
Instructions
- Slice the onion into rings or half-moons and mince the garlic finely.
- Place the chicken breasts in the crockpot in a single layer.
- Top with sliced onion, minced garlic, oregano, salt, and pepper.
- Pour the entire can of diced tomatoes over the chicken.
- Add the olives and crumbled feta on top.
- Drizzle olive oil over everything, then cover and cook on low for 6–8 hours or high for 4 hours.
- Once cooked, shred the chicken gently or serve whole with sauce ladled over.
Notes
Serve with rice, pasta, or bread to soak up the sauce. This dish can be stored in the refrigerator for 3–4 days or frozen for 2–3 months.
