- 4 boneless, skinless chicken breasts
- 1 cup chicken broth
- 1 cup cherry tomatoes, halved
- 1 bell pepper, chopped
- 1 onion, diced
- 3 cloves garlic, minced
- 1 cup kalamata olives
- 1 tablespoon dried oregano
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large crockpot, add the chicken breasts and pour the chicken broth over them.
- Add the cherry tomatoes, bell pepper, onion, garlic, olives, oregano, lemon juice, salt, and pepper. Stir to combine.
- Cover and cook on low for 360–480 minutes or on high for 180–240 minutes, until the chicken is cooked through and tender.
- Once done, shred the chicken with two forks and mix everything well.
- Serve hot, garnished with fresh parsley.
Notes
For a thicker sauce, transfer desired amount to a saucepan and simmer to reduce for 5–10 minutes. If using frozen chicken, add an extra 45–60 minutes on low.
