- 2 pounds boneless, skinless chicken thighs
- 1 cup pineapple chunks (fresh or canned)
- 1 cup teriyaki sauce
- 1/2 cup bell pepper, sliced
- 1/4 cup onion, sliced
- 1 tablespoon minced garlic
- 1 teaspoon ginger, grated
- Salt and pepper to taste
- Cooked rice for serving
- Green onions for garnish
Instructions
- Place the chicken thighs in the crockpot in a single layer if possible.
- Add the pineapple chunks, teriyaki sauce, bell pepper, onion, garlic, and ginger.
- Season with salt and pepper.
- Cover and cook on low for 6–7 hours or high for 3–4 hours until the chicken is tender and fully cooked.
- Shred the chicken with two forks and mix it with the sauce and vegetables.
- Serve over cooked rice and garnish with green onions.
Notes
For a thicker sauce, you can add a cornstarch slurry and cook on high uncovered for 10–15 minutes.
