Description
Tender slow cooker chicken in a sweet, garlicky, and slightly spicy honey soy sauce. Perfect served over rice or veggies for an easy family meal.

For the Chicken
- 1.5 lbs boneless, skinless chicken thighs or breasts
- ⅓ cup low-sodium soy sauce
- ⅓ cup honey
- 2 tablespoons tomato paste
- 2 teaspoons chili paste (sambal oelek or sriracha)
- 4 cloves garlic, minced
- 1 tablespoon rice vinegar
- 2 tablespoons cornstarch (for thickening)
Optional Toppings
- Toasted sesame seeds
- Chopped green onions
Instructions
- Place chicken in the bottom of the slow cooker.
- Whisk together soy sauce, honey, tomato paste, chili paste, garlic, and rice vinegar.
- Pour sauce over the chicken, coating it evenly.
- Cook on LOW for 4–5 hours or HIGH for 2–3 hours.
- Remove chicken and shred with forks.
- Thicken sauce: whisk 2 tbsp cornstarch into the slow cooker sauce and cook on HIGH for 15–30 minutes until thickened.
- Return shredded chicken to the slow cooker and stir to coat in sauce.
- Serve over rice or veggies, topped with sesame seeds and green onions.
Notes
For extra flavor, add a splash of fresh lime juice or sprinkle of crushed red pepper before serving.
