- 1.5 to 2 lbs beef steak, cut into bite-sized pieces
- 4 large russet potatoes, peeled and cubed
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 1 cup low-sodium beef broth
- 1 cup shredded sharp cheddar cheese
- ½ cup sour cream (plus extra for serving)
- 2 tablespoons unsalted butter, cut into small pieces
- Salt and pepper to taste
- 1 teaspoon paprika
- ½ teaspoon dried thyme
- Fresh chopped parsley or chives (optional, for garnish)
Instructions
- Layer cubed potatoes in the bottom of the crockpot.
- Top potatoes with bite-sized pieces of steak.
- Sprinkle diced onions and minced garlic over steak, and season with salt, pepper, paprika, and thyme.
- Pour beef broth over the ingredients and dot with butter pieces.
- Cover and slow cook on low for 6 to 8 hours or on high for 4 to 5 hours.
- About 15 minutes before serving, stir in sour cream and sprinkle cheese on top to melt.
- Garnish with fresh parsley or chives and serve hot.
Notes
For extra texture, you can add sliced bell peppers or mushrooms. Adjust cooking time if using chicken instead of steak.
