Description A hearty and flavorful taco casserole cooked in a crockpot, perfect for busy weeknights.

Ingredients

  • 1 pound ground beef
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 packet taco seasoning
  • 1 cup salsa
  • 2 cups tortilla chips
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream
  • 1 cup diced tomatoes
  • 1 cup chopped green onions

Instructions

  1. Brown the ground beef in a skillet over medium heat until nicely browned. Drain fat and set aside.
  2. In the crockpot, layer the cooked beef, black beans, corn, taco seasoning, and salsa.
  3. Sprinkle the tortilla chips over the top.
  4. Top with shredded cheddar cheese and diced tomatoes.
  5. Cook on low for 4-6 hours or on high for 2-3 hours until heated through.
  6. Before serving, add a dollop of sour cream and sprinkle chopped green onions on top.
