Ingredients

- 1 pound ground beef
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 packet taco seasoning
- 1 cup salsa
- 2 cups tortilla chips
- 2 cups shredded cheddar cheese
- 1 cup sour cream
- 1 cup diced tomatoes
- 1 cup chopped green onions
Instructions
- Brown the ground beef in a skillet over medium heat until nicely browned. Drain fat and set aside.
- In the crockpot, layer the cooked beef, black beans, corn, taco seasoning, and salsa.
- Sprinkle the tortilla chips over the top.
- Top with shredded cheddar cheese and diced tomatoes.
- Cook on low for 4-6 hours or on high for 2-3 hours until heated through.
- Before serving, add a dollop of sour cream and sprinkle chopped green onions on top.
Notes
Leftovers can be refrigerated for 3-4 days or frozen for up to 2 months. Serve with avocado slices or a simple salad.
