Ingredients

- 1 pound ground beef
- 1 (15 oz) can black beans, drained and rinsed
- 1 (15 oz) can corn, drained
- 1 (10 oz) can diced tomatoes with green chilies
- 1 packet taco seasoning (about 1 oz)
- 1 cup shredded cheese (cheddar or Mexican blend)
- 2 cups tortilla chips, crushed
- 1 cup salsa
Instructions
- Brown the ground beef in a skillet over medium-high heat for 6–8 minutes, until no longer pink. Drain excess fat.
- Transfer the browned beef to a crockpot. Add black beans, corn, diced tomatoes, taco seasoning, and salsa. Mix well.
- Sprinkle tortilla chips over the mixture in the crockpot.
- Scatter shredded cheese over the chips.
- Cover and cook on Low for 4–6 hours.
- Serve with fresh garnishes like cilantro, green onions, or avocado.
Notes
For a vegetarian version, replace ground beef with crumbled tofu or increase the beans.
