Description
A cozy turkey and vegetable soup made in a crockpot, perfect for weeknight dinners and utilizing leftover turkey.
Ingredients

- 2 cups cooked turkey, shredded
- 4 cups vegetable broth
- 2 cups mixed vegetables (carrots, peas, corn, etc.)
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 bay leaf
- 1 tablespoon olive oil
Instructions
- In a crockpot, heat olive oil and sauté the onion and garlic until translucent.
- Add the cooked turkey, mixed vegetables, vegetable broth, thyme, salt, pepper, and bay leaf.
- Stir to combine and cover.
- Cook on low for 6-8 hours or on high for 3-4 hours.
- Remove the bay leaf before serving. Enjoy warm.
Notes
For added flavor, consider finishing with a squeeze of lemon juice or stir in fresh herbs before serving.
