Description

A cozy turkey and vegetable soup made in a crockpot, perfect for weeknight dinners and utilizing leftover turkey.


Ingredients

  • 2 cups cooked turkey, shredded
  • 4 cups vegetable broth
  • 2 cups mixed vegetables (carrots, peas, corn, etc.)
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 bay leaf
  • 1 tablespoon olive oil

Instructions

  1. In a crockpot, heat olive oil and sauté the onion and garlic until translucent.
  2. Add the cooked turkey, mixed vegetables, vegetable broth, thyme, salt, pepper, and bay leaf.
  3. Stir to combine and cover.
  4. Cook on low for 6-8 hours or on high for 3-4 hours.
  5. Remove the bay leaf before serving. Enjoy warm.
