- 1 pound ground turkey
- 1 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 cups chicken broth
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 can diced tomatoes
- 2 cloves garlic, minced
- 1 teaspoon dried Italian herbs
- Salt and pepper to taste
Instructions
- In a bowl, mix together ground turkey, breadcrumbs, Parmesan, egg, salt, and pepper. Form mixture into meatballs.
- Place meatballs in the crockpot.
- Add chicken broth, onion, carrots, celery, diced tomatoes, garlic, and Italian herbs to the crockpot.
- Stir gently to combine ingredients.
- Cover and cook on low for 360 minutes or high for 240 minutes.
- Adjust seasoning with salt and pepper before serving.
Notes
For a thicker broth, you can mash a few carrots against the side of the pot or stir in a slurry of cornstarch and water.
