Ingredients

  • 1 pound ground turkey
  • 4 cups vegetable broth
  • 2 cups mixed vegetables (carrots, peas, corn, etc.)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 bay leaf

Instructions

  1. Brown the turkey: Heat a skillet over medium heat and add the ground turkey. Cook until browned, about 6–8 minutes, then drain excess fat.
  2. Prepare the crockpot base: Transfer the browned turkey into a crockpot and add 4 cups of vegetable broth.
  3. Add aromatics and vegetables: Stir in the diced onion and minced garlic, then add the mixed vegetables.
  4. Season and bay leaf: Add dried thyme, oregano, salt, and pepper, then drop in the bay leaf.
  5. Combine and cook: Stir everything and cover; cook on low for 6–8 hours or high for 3–4 hours.
  6. Finish and serve: Remove the bay leaf, adjust seasoning if needed, and serve hot.

Notes

For a chunkier texture, cook for a shorter time and add some vegetables later if needed.
