- 1 cup all-purpose flour
- 1/2 cup powdered sugar
- 1/2 cup unsalted butter, softened
- 1 cup fresh dandelion petals, washed and dried
- 3/4 cup granulated sugar
- 2 large eggs
- 1/2 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1/4 teaspoon baking powder
- Pinch of salt
Instructions
- Preheat the oven to 350°F (175°C). Grease an 8×8 inch baking dish.
- In a bowl, mix flour, powdered sugar, and softened butter until crumbly; press into the prepared baking dish to form the crust.
- Bake for 15 minutes until lightly golden. Remove from oven but leave oven on.
- In another bowl, whisk together granulated sugar, eggs, lemon juice, lemon zest, baking powder, salt, and dandelion petals until smooth.
- Pour the lemon mixture over the crust and bake for an additional 20–25 minutes until set.
- Let cool completely before cutting into bars. Dust with powdered sugar if desired.
Notes
Ensure dandelion petals are from pesticide-free areas. For better texture, do not overbake the custard.
