- 1 package chocolate sandwich cookies
- 1/4 cup unsalted butter, melted
- 1/4 cup granulated sugar
- 2 cups fresh raspberries
- 1/2 cup granulated sugar (for sauce)
- 1 tbsp lemon juice
- 16 oz cream cheese, softened
- 1 cup granulated sugar (for filling)
- 1 cup sour cream
- 3 large eggs
- 2 tsp vanilla extract
- 1 cup heavy cream
- 8 oz dark chocolate, melted
- 1 cup heavy cream (for ganache)
- 8 oz dark chocolate, finely chopped (for ganache)
- Fresh raspberries for garnish (optional)
- Chocolate shavings for garnish (optional)
Instructions
- Preheat oven to 350°F (175°C). Crush chocolate sandwich cookies and combine with melted butter and sugar.
- Press mixture into a 9-inch springform pan and pre-bake for 8-10 minutes. Cool completely.
- In a saucepan, combine raspberries, sugar, and lemon juice. Cook over medium heat for 5-7 minutes, then strain if desired and cool.
- Beat cream cheese until smooth, then mix in sugar and sour cream.
- Add eggs one at a time, mixing well. Stir in vanilla, fold in heavy cream, and incorporate melted chocolate.
- Pour filling into cooled crust and dollop raspberry sauce on top, swirling gently.
- Wrap the pan in aluminum foil and place in a roasting pan with water. Bake at 325°F (160°C) for 60-75 minutes.
- Let cool in the oven with the door open for an hour, then refrigerate for at least 6 hours.
- For the ganache, heat cream and pour over chopped chocolate. Stir until smooth, cool slightly, then pour over cheesecake.
- Garnish with fresh raspberries and chocolate shavings. Slice and serve chilled.

Ensure ingredients are at room temperature for a smooth texture. Avoid overmixing once eggs are added to reduce cracks.
