Description

A decadent twist on classic tiramisu, this Cherry Amaretto version layers mascarpone cream with cherry-soaked ladyfingers, dark cherries, and a hint of almond liqueur. Rich, elegant, and perfect for entertaining.

  • 2 cups mascarpone cheese
  • 1 cup heavy cream (cold)
  • ½ cup Amaretto liqueur
  • 1½ cups pitted dark sweet cherries (fresh, frozen, or preserved)
  • ¼ cup sugar (for syrup)
  • ¼ cup water
  • 12 tbsp cherry preserves or cherry syrup
  • 3 egg yolks (optional)
  • Unsweetened cocoa powder (for dusting)
  • Dark chocolate shavings (optional for garnish)

Instructions

  1. Make the Cherry-Amaretto Syrup: In a small saucepan, combine 1½ cups cherries, ¼ cup sugar, ¼ cup water, and 3 tbsp Amaretto. Simmer for 10–12 minutes until thickened. Let cool.
  2. Make the Mascarpone Cream Filling: In a bowl, whip 1 cup heavy cream to soft peaks. In another bowl, mix 2 cups mascarpone with 3 egg yolks (if using) and 2 tbsp sugar. Fold in the whipped cream gently until smooth.
  3. Assemble the Tiramisu: Dip ladyfingers quickly in the cooled cherry-Amaretto syrup. Layer soaked ladyfingers at the bottom of a trifle dish or baking dish. Add a layer of mascarpone cream, then spoon over a few cherries or cherry preserves. Repeat layers until all ingredients are used, finishing with a smooth mascarpone layer on top.
  4. Chill & Serve: Cover and refrigerate for at least 6 hours or overnight. Before serving, dust with unsweetened cocoa powder and garnish with dark chocolate shavings and extra cherries.

Notes

For a non-alcoholic version, substitute Amaretto with cherry juice or almond extract diluted in water. Frozen or preserved cherries work well if fresh aren’t available.
