- 2 cups chocolate cookie crumbs (like Oreos, finely crushed)
- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1 cup powdered sugar
- 2 cups whipped topping (such as Cool Whip)
- 2 boxes (3.9 oz each) instant chocolate pudding mix
- 3 cups cold milk
- 1 cup semi-sweet chocolate chips
- 1/2 cup heavy cream
- 1 cup chopped pecans (toasted)
- 3/4 cup caramel sauce
- 1/2 cup additional chocolate chips (optional, for garnish)
Instructions
- Prepare the crust by combining chocolate cookie crumbs and melted butter. Press the mixture into the bottom of a 9×13-inch dish and refrigerate.
- Beat softened cream cheese and powdered sugar until smooth, then fold in whipped topping. Spread over the crust.
- Whisk together instant pudding mix and cold milk until thick, then spread over the cheesecake layer.
- Drizzle half of the caramel sauce and sprinkle half of the chopped pecans on top.
- For the ganache, heat heavy cream until simmering, pour over chocolate chips, let sit, then stir until smooth. Spread ganache over the layers.
- Top with remaining caramel sauce, pecans, and optional chocolate chips.
- Chill for at least 4 hours or overnight before serving.
Notes
For best results, chill layers between assembling and serve with whipped cream or ice cream.
