- 2 cups chocolate cookie crumbs (like Oreos, finely crushed)
- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1 cup powdered sugar
- 2 cups whipped topping (such as Cool Whip)
- 2 boxes (3.9 oz each) instant chocolate pudding mix
- 3 cups cold milk
- 1 cup semi-sweet chocolate chips
- 1/2 cup heavy cream
- 1 cup chopped pecans (toasted)
- 3/4 cup caramel sauce (store-bought or homemade)
- 1/2 cup additional chocolate chips (optional, for garnish)
Instructions
- Prepare the crust by combining chocolate cookie crumbs and melted butter, pressing evenly into the bottom of a 9×13-inch dish. Refrigerate while preparing layers.
- In a bowl, beat softened cream cheese and powdered sugar until smooth. Fold in whipped topping and spread over the chilled crust.
- Whisk instant pudding mix and cold milk together until thick. Spread pudding layer over the cheesecake layer.
- Drizzle half of the caramel sauce over the pudding and sprinkle half of the chopped pecans.
- Heat heavy cream in a saucepan until just simmering. Pour over semi-sweet chocolate chips, let sit, then stir until smooth. Spread ganache over the caramel and pecans.
- Drizzle remaining caramel and top with remaining pecans and optional chocolate chips. Chill in the refrigerator for at least 4 hours or overnight.
Notes
For extra flavor, add a bit of espresso powder to the whipped topping. Ensure cream cheese is fully softened to avoid lumps.
