Ingredients

  • 1 pound parsnips, cut into uniform sticks
  • 2 tablespoons olive oil or avocado oil
  • 2 tablespoons maple syrup (or honey/agave as a substitute)
  • 1 tablespoon fresh thyme (or 1 teaspoon dried thyme)
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel the parsnips and cut them into uniform sticks, about 1/2 inch to 3/4 inch thick.
  3. In a large mixing bowl, combine the parsnip sticks with the oil, maple syrup, thyme, salt, and pepper; toss gently to coat.
  4. Spread the parsnips on a baking sheet in a single layer without crowding the pan.
  5. Roast for 25–30 minutes, flipping or tossing once halfway through, until tender and caramelized.
  6. Serve warm, garnished with extra thyme and a sprinkle of flaky sea salt if desired.
