Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Peel the parsnips and cut them into uniform 1/2-inch thick sticks.
  3. In a mixing bowl, toss parsnips with oil, maple syrup, thyme, salt, and pepper.
  4. Spread parsnip sticks in a single layer on the baking sheet.
  5. Roast for 25–30 minutes, flipping halfway through, until fork-tender and caramelized.
