Ingredients

  • 1/2 cup almond milk (or any plant-based milk)
  • 1/4 cup maple syrup
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup blueberries (fresh or frozen)
  • 1 tablespoon coconut oil (melted)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a donut pan with coconut oil.
  2. In a bowl, mix the flour, baking powder, and salt together.
  3. In another bowl, combine almond milk, maple syrup, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until combined.
  5. Gently fold in the blueberries.
  6. Pour the batter into the prepared donut pan, filling each cavity about 2/3 full.
  7. Bake for 10-12 minutes or until a toothpick comes out clean.
  8. Let cool for a few minutes before removing them from the pan. Serve warm.
