Description
Indulge in these decadent Salted Caramel Fudge Truffles featuring rich chocolate and a gooey caramel center, finished with a sprinkle of flaky sea salt.

- 1 cup (200g) granulated sugar
- ¼ cup (60ml) water
- 6 tablespoons (85g) unsalted butter, cubed, at room temperature
- ½ cup (120ml) heavy cream, warmed slightly
- ½ teaspoon sea salt, plus extra for garnish
- ½ teaspoon pure vanilla extract
- 1 (14-ounce/397g) can sweetened condensed milk
- 12 ounces (340g) semi-sweet or dark chocolate chips (60-70% cacao recommended)
- 4 tablespoons (56g) unsalted butter, cubed
- 1 teaspoon pure vanilla extract
- ¼ teaspoon sea salt
- 12 ounces (340g) good quality melting chocolate (milk, semi-sweet, or dark)
- Flaky sea salt, for sprinkling and garnish
Instructions
- Line an 8×8 inch pan with parchment paper and lightly grease it.
- Combine granulated sugar and water in a saucepan, stir until dissolved.
- Bring to a boil over medium-high heat, swirling occasionally, until it turns light amber.
- Remove from heat, add cubed butter and whisk until melted.
- Slowly pour in warm heavy cream while whisking until smooth.
- Stir in sea salt and vanilla extract, taste and adjust salt if needed.
- Pour two-thirds of the caramel into a bowl to cool; set aside the rest for drizzling.
- In a double boiler, melt chocolate chips with unsalted butter until smooth.
- Remove from heat, stir in sweetened condensed milk, additional vanilla extract, and sea salt until combined.
- Pour warm fudge mixture into the prepared pan, spread evenly, cover, and refrigerate for at least 4 hours.
- Cut the fudge into small squares, flatten them, and fill with cooled caramel.
- Roll to form truffles and chill for 30-60 minutes.
- Melt coating chocolate, then dip truffles until fully coated and sprinkle with sea salt.
- Refrigerate the coated truffles until set, about 15-20 minutes.
Notes
For best results, use high-quality chocolate and allow truffles to chill before coating.
