Description

A delightful combination of creamy cheesecake and a classic sugar cookie crust, perfect for any occasion.

Ingredients

Scale
  • 1 ¾ cups all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup unsalted butter, at room temperature
  • 1 cup regenerative organic certified cane sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • ½ cup sour cream
  • ½ cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 tablespoon all-purpose flour
  • 2 large eggs
  • ½ cup powdered sugar
  • 2 tablespoons milk or heavy cream
  • Sprinkles for decoration (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch springform pan.
  2. Combine flour, baking soda, and salt in a medium bowl; whisk together.
  3. Cream butter and cane sugar until fluffy, then mix in the egg and vanilla.
  4. Gradually mix in the dry ingredients until combined. Press the dough into the bottom of the pan and bake for 12 to 15 minutes.
  5. Lower the oven temperature to 325°F (160°C) for the cheesecake filling. Beat cream cheese until smooth, then add sugar and mix until well combined.
  6. Stir in sour cream, heavy cream, vanilla, and pinch of salt. Add flour, then mix in eggs one at a time.
  7. Wrap the springform pan in foil, pour in the filling over the cooled crust, and place in a water bath. Bake for 60 to 75 minutes.
  8. Turn off the oven and let the cheesecake cool inside for an hour. Chill in the refrigerator for at least 6 hours or overnight.
  9. For the frosting, beat butter until fluffy, then gradually add powdered sugar. Mix in salt, vanilla, and milk until spreadable.
  10. Spread frosting over the chilled cheesecake and decorate with sprinkles if desired. Refrigerate for another 30 minutes before serving.

Notes

For best results, use room temperature ingredients and avoid overmixing the filling to prevent cracks. Refrigerate overnight for optimal flavor.
