Description
Tender shredded chicken slow cooked in a sweet and savory honey garlic soy sauce, finished with a thickened glaze. Perfect served over rice or noodles.
Ingredients

- 1.5 lbs boneless skinless chicken breasts (or thighs)
- 2 teaspoons garlic, minced
- 2 teaspoons fresh ginger, grated
- 1/4 cup honey
- 3 tablespoons brown sugar
- 1/2 cup low sodium soy sauce
- 2 teaspoons toasted sesame oil
- 2 tablespoons rice vinegar
- 2 tablespoons cornstarch
- 1/4 cup cold water
- 1 tablespoon sesame seeds (for garnish)
- 2 tablespoons sliced green onions (for garnish)
Instructions
- In a small bowl, whisk together garlic, ginger, honey, brown sugar, soy sauce, sesame oil, and rice vinegar.
- Place the chicken in the crockpot and pour the sauce over the top.
- Cover and cook on LOW for 5–6 hours or HIGH for 3 hours.
- Remove the chicken and shred it with two forks.
- Strain the sauce from the crockpot into a saucepan.
- In a bowl, mix cornstarch with cold water until dissolved, then stir into the sauce.
- Bring to a simmer and cook 1–2 minutes, until thickened.
- Pour the thickened sauce over the shredded chicken and toss to coat.
- Garnish with sesame seeds and green onions. Serve over rice or your preferred base.
Notes
For extra heat, add a teaspoon of sriracha or chili flakes to the sauce before cooking.
