A quick and satisfying fried rice recipe perfect for using leftover rice and vegetables.
Ingredients

- 2 cups cooked leftover rice
- 2 eggs
- 1 cup mixed vegetables (like peas and carrots)
- 3 tablespoons soy sauce
- 2 tablespoons green onions, chopped
- 1 tablespoon sesame oil or vegetable oil
Instructions
- Heat the oil in a large skillet or wok over medium-high heat.
- Add the mixed vegetables and stir-fry for 2-3 minutes until heated through.
- Push the vegetables to the side of the skillet and crack the eggs into the pan, scrambling them until fully cooked.
- Add the rice to the skillet, breaking up any clumps.
- Pour the soy sauce over the rice and mix everything together.
- Stir in the green onions and cook for an additional 2 minutes until everything is heated through.
- Serve hot.

Use cold, leftover rice for the best texture.
