Description

Ingredients

  • 2 cups cooked leftover rice
  • 2 eggs
  • 1 cup mixed vegetables (like peas and carrots)
  • 3 tablespoons soy sauce
  • 2 tablespoons green onions, chopped
  • 1 tablespoon sesame oil or vegetable oil

Instructions

  1. Heat the oil in a large skillet or wok over medium-high heat.
  2. Add the mixed vegetables and stir-fry for 2-3 minutes until heated through.
  3. Push the vegetables to the side of the skillet and crack the eggs into the pan, scrambling them until fully cooked.
  4. Add the rice to the skillet, breaking up any clumps.
  5. Pour the soy sauce over the rice and mix everything together.
  6. Stir in the green onions and cook for an additional 2 minutes until everything is heated through.
  7. Serve hot.
