Ingredients

  • 2 cups cooked rice
  • 2 eggs
  • 1 cup mixed vegetables (peas, carrots, etc.)
  • 2 tablespoons soy sauce
  • 1 tablespoon oil (vegetable or sesame)
  • Green onions for garnish (optional)

Instructions

  1. Heat oil in a pan over medium heat.
  2. Scramble the eggs in the pan until fully cooked, then remove and set aside.
  3. In the same pan, add the cooked rice and mixed vegetables.
  4. Stir-fry for a few minutes until heated through.
  5. Add the scrambled eggs back to the pan, pour in the soy sauce, and mix well.
  6. Cook for an additional 2-3 minutes, stirring frequently.
  7. Garnish with green onions if desired and serve hot.

Notes

Use day-old rice for better texture and prevent the fried rice from becoming mushy. Stir continuously while cooking to ensure even heating.
