- 2 cups cooked rice
- 2 eggs
- 1 cup mixed vegetables (peas, carrots, etc.)
- 2 tablespoons soy sauce
- 1 tablespoon oil (vegetable or sesame)
- Green onions for garnish (optional)
Instructions
- Heat oil in a pan over medium heat.
- Scramble the eggs in the pan until fully cooked, then remove and set aside.
- In the same pan, add the cooked rice and mixed vegetables.
- Stir-fry for a few minutes until heated through.
- Add the scrambled eggs back to the pan, pour in the soy sauce, and mix well.
- Cook for an additional 2-3 minutes, stirring frequently.
- Garnish with green onions if desired and serve hot.
Notes
Use day-old rice for better texture and prevent the fried rice from becoming mushy. Stir continuously while cooking to ensure even heating.
