- 45 ml (3 tablespoons) vegetable oil, divided
- 30 ml (2 tablespoons) Sriracha
- 1–2 g cornstarch, ½ – 1 teaspoon
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 2.5 cm piece ginger, peeled and minced
- 3 cloves garlic, peeled and minced
- 1 teaspoon chili powder
- Steamed rice, for serving
- Steamed tenderstem broccoli, for serving
- Dry roasted peanuts, chopped, for garnish
- Lime wedges, for garnish
- Green onions, sliced, for garnish
Instructions
- In a medium mixing bowl, combine Sriracha, soy sauce, honey, ginger, garlic, chili powder, and cornstarch to prepare the marinade.
- Heat half of the vegetable oil in a large skillet over medium heat. Add the chicken strips and cook for about 5 minutes until browned.
- Pour the marinade over the chicken, stirring to coat each piece. Cook for another 10 minutes until the sauce thickens and the chicken is cooked through.
- Serve the chicken over a bed of steamed rice, accompanied by steamed tenderstem broccoli. Garnish with chopped dry roasted peanuts, lime wedges, and sliced green onions.
